Best Dad In The World

I swear that if I didn't have bad luck I wouldn't have any luck at all.  The night after we got back from vacation I discovered that my fridge had quit while we were gone.  What the hell?!  Why does this kind of stuff happen to me?  I called my dad and he answered the phone to me bawling my eyes out.

Brooke, is that you?

Yes, Dad.  *SOBBING* *SNIFFLING* My fridge quit while I was on vacation!  *BAWLING*


Oh no, honey!  Was there a lot of stuff in it?

Yes!  *SOBBING*  The mice for Pacen's snakes are mush and everything else is ruined too!  *SNIFFLE* A lot of stuff! 

Oh no.  Well hon, there is nothing you can do about it tonight.  You need some sleep.  Take a deep breath and go to bed and call in to work tomorrow and tell them you'll be late.  Clean out your fridge and I'll call Tim and see if we have any fridges in stock in Crawford.   


*BAWLING*  Okay.

Luckily the store in Crawford had a fridge in stock.  Quinn had the day off so she drove down and got it.  That night dad and Quinn drove to Lusk and dad helped me take my old fridge out, which was more difficult than we imagined, and put the new fridge in.  Then he helped me a bit with my yard project.

I am so thankful for my dad!  He is the best and although he is always super busy with his job and projects at home, he finds time to help my sisters and I out when we need it.  He has been the best father figure for us girls and for Pacen.  My dad is funny, compassionate, hard working, patient, and very loving of his family.  I only hope that Pacen grows up to be like him.

Busy, busy Summer

Oh my! I have been slacking on my blog this Summer! I've been busy. I spent most evenings this Summer either playing Softball or training for my first Triathlon. As far as weekends are concerned...c'mon, everyone knows how Summer weekends are...busy, busy, busy. I made it to the lake a couple of times, hung out with friends, enjoyed Rawhide, participated in the Sioux County Fair (my hometown fair), attended weddings, etc. Summers are crazy hectic and I'm ready for things to slow down. Unfortunately, I don't think they will. Pacen is going to be participating in a few more things during this school year so I have a feeling we'll be go, go, go all year. *sigh* Here are some pictures from this Summer

Dinner with good company

For about a month or so my sisters and I have been setting aside one night a week to get together and have dinner. We take turns at each others houses. A couple weeks ago we had it at my house and I made Cheese and Chicken Enchiladas. We were on a Mexican "kick" for a couple of weeks...Tacos at Raine's one week and Enchiladas at my place the next. Who doesn't love Mexican food though, right? Okay, I'm sure there are a few strange people out there that don't like it, but I think Mexican food is DELICIOUS! It's even better when you can enjoy it with good company! :) Unfortunately I didn't take any pictures of my sisters and I...just the food. Tonight we had dinner at Quinn's. She made BBQ chicken, pasta salad, and rice. It was yummy. Still no pictures of us girls though. I'll have to remember next time!

Anyway, I found the recipe on my favorite cooking/baking site, Recipe Zaar. This is where I find many of my recipes. You can pretty much find any recipe on this site. I love it! The good thing about the Cheese and Chicken Enchilada recipe is that it can be made as a OAMC (once a month cooking) recipe! I ended up freezing half.

Cheese and Chicken Enchiladas

1 1/2 cups shredded chicken breasts
1 cup reduced-fat sharp cheddar cheese
1 cup picante sauce
3 ounces neufchatel cheese (1/3 fat free cream cheese)
1 tsp cumin
1 1/2 cups bottled green taco sauce
flour tortillas

I put 4-5 frozen chicken breasts in a crock pot. I then covered the chicken in picante sauce and cooked on high for 4 hours. I then used two forks to shred the chicken. Spray a skillet with cooking spray and heat over low heat. Mix the chicken, 1/2 cup cheddar cheese, picante sauce, and cream cheese. Add to the skillet and cook until cheese begins to melt. Spoon about 1/3 cup filling on each tortilla and roll up. Place enchiladas (seam side down) in a 9x13 baking dish. Drizzle with taco sauce and remaining cheese. (At this point you can freeze some if you want. Just put them in the freezer until hard and then bag them. To cook, just thaw in the fridge and bake.) Cover and bake at 350 degrees for 15 minutes.

Surprise!

Friday evening after I got off work Quinn and I headed to Breckenridge, CO to surprise an old friend of ours. The friend we surprised was Matt Seidel. He grew up in Crawford, NE, which is only 30 miles or so from Harrison (the town I grew up in). We've been friends for 10+ years and he is just an all-around awesome guy (super nice, hilarious, etc). He moved to Sacramento, CA a few years ago or so and ended up joining a band. Arden Park Roots. They released their first album last year and this year they went on their first tour. They also have another band, The Livin's Easy, which is a Sublime Tribute Band. They do awesome with their own music and with Sublime's. Anyway, I've been wanting to see them play for quite some time and when I found out they were going to be in Colorado I was stoked! Many of their shows were on weeknights and the shows that were fairly close to where I live were taking place while I was in The Bahamas. Luckily their final Colorado show was in Breckenridge on a Friday night.

After 5 1/2 hours of driving (and giving my sister a major panic attack with my driving skills) we made it to the Three20South bar where the band was playing for the night. We got there at just the right time. The band was just getting ready to play so we got to say hi to Matt before they started. Unfortunately, our surprise was ruined. Matt had heard we were coming just a couple hours before we got there. By some odd coincidence Matt's mom and our dad ran into each other and dad told her about Quinn and I driving down to see Matt. Apparently neither knew it was a surprise so she called Matt and let him know. :) Oh, well. He was still happy to see us.

The band(s) did great and it was so awesome to see Matt in action (he plays the guitar)! The only downfalls of the trip were the fact that it was a very fast trip (we had to be in Harrison by 7:00 Saturday night for Pacen's 1st Communion) and we ended up staying in a creepy Motel. The Motel looked nice online when I made the reservations, but it turned out to be pretty trashy. I slept with a can of pepper spray next to me and Quinn slept with my softball bat, aka Baby Blue, next to her. We also had my self-defense class moves to protect us. :) Nothing happened, but I guess it's better to be safe than sorry, right.

Adventures in Camping

This past weekend was the first camping trip of the year. I packed up everything I thought we would need (food, sleeping bags, tent, cooking utensils, etc) and loaded it all and Pacen up in our reliable 1990 Ford Ranger. My boyfriend, Kurtis, was very worried about us, thinking we would get stuck in the mud or that something else might happen. The fact that we were going to be about an hour from any kind of cell phone signal didn't help. Finally after telling him a million times that things would be OK and helping settle his nerves by taking his tow rope, we were on our way. We stopped along the way to pick up Pacen's friend, Teagan, and then continued be-bopping down the road towards LaBonte Canyon southwest of Douglas.

On the way to LaBonte Canyon you have to drive on about 20 miles or so of dirt roads. Well, as worried as Kurtis had been I kept imagining that the road would be deep, thick mud and that I'd have to drive most of the way in 4-wheel drive. Well, the worst that we saw were a couple of "rivers" (from all the rain we'd gotten the 3 days before) flowing across the road, until we got to the entrance of the LaBonte Canyon Campground. There actually was mud at the entrance and, yes, it was deep and thick, but we made it through just fine. Not once did I have to turn on the 4-wheel drive.

We cruised the campground looking for my cousin, Joel, his wife, Sara, and their friend, Aaron. We didn't see them and my pickup was starting to smoke and make weird noises so we found a good spot to set up camp. My pickup died just as we pulled in and the smoke really started rolling. The boys ran off to play and I decided I had better check under the hood. Well, a PVC tee that was installed on a rubber hose had cracked and broke into three pieces. I figured there wasn't much I could do about it at that moment so I decided to set up the tent. A few hours later we started a fire and the boys started roasting hot dogs on sticks. Shortly after that Joel, Sara, and Aaron showed up. Apparently it had taken them so long because the way they came was extremely muddy and Aaron had gotten his pickup stuck. After trying and trying to get his pickup unstuck they ended up loading most of his stuff into Joel and Sara's pickup and leaving his in the middle of nowhere. I was just glad the made it. We spent the rest of the evening grilling hot dogs, roasting marshmallows, and sitting around the campfire enjoying a few beers.


Sunday we woke up to a sunny, windy day. After eating breakfast and enjoying a friendly game of horseshoes we decided to work on my pickup. We managed to fix the hose and then we filled some part of the pickup with water (since we didn't have antifreeze). When it came time to start the pickup it wouldn't start. Silly me...I had left the lights on the day before so the battery was dead. We jumped it and decided to take it for a test drive to make sure the hose would stay together. Everything ran smooth and when we got back to camp I left it running so the battery would finish charging. Teagan, Aaron, and Joel decided to play some football so Sara, Pacen, and I decided to walk up the road and check out a waterfall we had seen (caused by the rain). Our little jaunt turned into a full fledged hike. Unfortunately I didn't take my camera on the hike and I missed some awesome photo opportunities. :( While on our hike we think we saw bear poo and maybe mountain lion poo. We also saw many signs of Elk. We didn't ever see any kind of animal, not even a chipmunk.

When we got back to camp Joel informed me that while we were gone water started spraying out the front of the engine! We put more water in it and the boys and I packed up to head home. The pickup started fine, but then it wouldn't move. We tried to fix it again, but to no avail. Finally we decided the best thing to do would be to drive until I had a signal on my phone so I could call Kurtis. Joel and I drove and drove and finally got a signal about 5-10 miles from Douglas! I called Kurtis and asked him if he would be willing to come get us the next day (he was at a wedding). Luckily he was willing. When we got back I set the tent back up and then enjoyed some nice Hobo Pie that Sara and Joel had made. After the boys went to bed us adults spent the rest of the evening sitting around the campfire, listening to Aaron play his guitar and Joel play the harmonica, singing, and getting drunk. It was a good time.

Monday morning (Memorial Day) we woke up to a drizzly, cold, foggy day. The fog kinda made everything look pretty, but I still could've done without it. I managed to get the tent down and get everything packed up (again). An hour or two later Kurtis showed up with a trailer and we got my pickup loaded. We said our goodbyes and headed home. I was so glad to get home and take a nice hot shower (I spent 3 days in the same grungy clothes and I stunk)! Also, I am very glad that my Knight in shining armor saved me!
